It could also be an embarrassing memory? You try to forget it when it recently happened (bury it when it’s alive) and recall it after you’ve gotten over it (dig it up when it’s dead).

Plants shouldn’t already be dead when they are ready to harvest as far as I know…

I think a tree would make more sense. Plants may be small and dont always have to be dug up but trees are colossal and have to be dug up when they die else they just take up space
